Years ago, when people asked me if I liked a certain food, like zucchini or liver, I would tell them I didn’t eat anything with the last 6 letters of the alphabet in its name. I was mostly not joking.
Somewhere along the line, in the not too distant past, we discovered avocados. We certainly had never heard of them when we were growing up. I know we occasionally ate avocados while living in Missouri, but they weren’t a staple in our diet. Then we moved to Florida. Apparently in Florida they were once called Alligator Pears. You can see why.
As we learned about low carb eating and intermittent fasting, the avocado, a fruit touted as a superfood, is one of the most nutrient dense foods available. They’re low in carbs and high in very heart-healthy fat. The foods you can pair them with or add them to is astonishing. Try adding avocado to egg salad and let me know what you think.
Guacamole! Avocado toast! Chocolate mousse (yes…I found a delicious recipe for chocolate mousse with avocado in it)! Avocado cheesecake bites (nope…haven’t tried that one yet)! Taco soup! Fiesta avocado corn salad! Avocado boats! And on and on and on.
I’m sold on avocados.
